A study on the mineral depletion of the foods
available to us as a nation over the period 1940 to 1991
Five editions of the well known series The
Chemical Composition of Foods by McCance and Widdowson are examined in
order to provide some insight into any variation in the quality of foods
available to us. Some 27 varieties of vegetables, 17 kinds of fruit, ten
cuts of meat and some milk and cheese products were checked. The results
demonstrated a significant loss of minerals and trace elements over the period.
